News from the Montessori Middle School at Millstream Farm-

"Erin Saltsman, a professional baker and parent at Lithfield Montessori School, has turned us on to the fascinating world of wild yeast colonies and the possibilities for putting these single-celled fungi to work transforming flour and water into a sourdough capable of making a unique, local, artisan bread. We’ve been harvesting the wild yeast spores that live in air and flour, nurturing them and observing the fermentation process whereby the yeast convert glucose to carbon dioxide and alcohol, which infuses the bread with flavor before it burns off in the oven. At first we experimented informally with sourdough, and then we designed a controlled experiment to compare scientifically our own wild-yeast sourdough to a sourdough made with cultivated, commercial yeast." - Caren Ross, Middle School Directress
